From Kitazawa Seed Co.: This popular traditional Japanese green has deep green leaves and a mild flavor, somewhere between that of a spinach and an Asian mustard. Sow seeds in early spring or late summer. Prepare rows 14"-20" apart in fertile, well-drained soil. Plant each seed ½"-¾" deep and 1"-2" apart. Harvest in 40-50 days or when plant reaches 8"-12" tall.

(cont.) Its tender leaves and mild flavor make it best for salad or stir-fries. Can be eaten at any stage; the flower shoots are sweet and juicy. Komatsuna is especially rich in calcium.
